Stuffed Squidgy Dates
I made a 'Tik Tok' video (we're actually on Tik Tok!!!) of how to make these a couple of weeks ago, and then saw a post Divine Chocolate had created on Instagram and decided to remake them as mine definitely didn't look as pretty! But I was given this recipe by a nutritionist who was suggesting them as a healthy replacement to my current craving of sugary treats. (I'm pretty sure she was only suggesting eating a couple at a time - not the whole plate as I did!) 😂
The good stuff:
Dates are an excellent source of fibre, potassium, magnesium, maganese and copper. They also contain phytonutrients which help to prevent disease and keep your body working optimally.
Peanut Butter is a great source of protein, magnesium, zinc, niacin, phosphorous and Vitamin B-6
Dark Chocolate is rich in antioxidants and packed with nutrients all that may improve brain function, heart health and lower the risk of diabetes - for maximum health benefits, opt for a cocoa content of 60% or above
Anyway, these are a sublime and healthy alternative to my usual 'go to' of biscuits and cakes, and go beautifully with our Ethiopia or Brazil coffees.
You will need:
- Dark Chocolate (I used Divine Smooth Dark with Pink Himalayan Salt)
- Medjool dates
- Peanut butter (I used Whole Earth Crunchy Peanut Butter)
- A range of toppings; Cornish sea salt, pistachios and freeze dried raspberries.
Remove the stone from the dates, then fill each date with peanut butter. Gently squeeze each date shut and refrigerate for 10 minutes. Meanwhile melt the chocolate. Once the chocolate is completely melted, dip each stuffed date in the chocolate, completely coating them.
Top with either the sea salt flakes, crushed pistachios or freezed dried raspberries and then refrigerate for a further 10 minutes.
Finally brew yourself a delicious cup of coffee - and enjoy together.
